Vegan peanut butter loaf recipe.

Last week, I made this delicious vegan peanut butter choc chip bread and it was a big hit. Delicious, wholesome, vegan and refined sugar free! I love baking on weekends and sharing my creations with my family! But as always when I bake I try to keep my recipes low sugar, oil-free and made with nutritious ingredients. I love baking but I want to do it in a healthy way!

If you have been following me for a while you will probably know that baking loaves are some of my favourite recipes to make and share! You will be able to find many vegan loaves/ banana breads on my page and at the bottom of this recipe.

This vegan peanut butter loaf recipe was created as part of a collaboration with Happy Way protein powders. I know most of you won’t have this product in the kitchen so I have written the recipe using a substitution. You can either use peanut flour, peanut butter protein powder or almond meal instead.

I think this peanut butter bread recipe would also be great without the chocolate chips or with some berry jam swirled throughout or to be served with. My peanut butter loaf would be great served as a PB jelly loaf!

Vegan Peanut Butter Chocolate Chips Loaf

A delicious healthy vegan recipe combining peanut butter and chocolate chips!
Prep Time 10 minutes
Cook Time 1 hour

Ingredients

  • 1 1/3 cup wholemeal wheat flour
  • 1/2 cup smooth peanut butter
  • 1/2 cup peanut flour or almond meal
  • 2 tsp baking powder
  • 1/2 cup coconut sugar or raw sugar
  • 1 tsp vanilla essence
  • 1 1/2 cup plant-milk of choice
  • 1/2 cup vegan dark chocolate chips

Instructions

  • Preheat your oven to 180 degrees Celsius.
  • Line a loaf tin with baking paper.
  • In a bowl combine all the ingredients together. Do not over stir.
  • Pour into your tin and add extra choc chips on top.
  • Bake for 50-60 minutes at 180 degrees Celsius.

Substitutions for my peanut butter loaf:

You can swap the whole-wheat flour for spelt flour or oat flour. In this vegan peanut butter bread you can also swap the coconut sugar for normal sugar or maple syrup. If using maple syrup you might need to reduce the quantity of plant milk in the recipe. This is so it is not too wet for baking and stays undercooked after baking.

If you cannot have peanuts I don’t recommend trying this recipe without peanut butter. Instead try my other vegan baking recipes!

Like I mentioned above, I made this recipe with and without peanut protein powder/ peanut flour.
