I am a big fan of easy baking recipes – especially when they are healthy and vegan so I am happy to share with you this Vegan 1-bowl Mocha Banana Bread made using @califiafarms Mocha Cold Brew Coffee. ☕️🍫🍌If you love mocha flavour in baking you will love this recipe! I recommend serving with a glass of delicious Califia Farms Mocha Cold Brew Coffee which is the perfect combination of cold brew coffee, chocolate and smooth creamy almond milk. It’s dairy free and low in sugar compared to traditional flavoured milks.🙌🏻 If you are in Victoria you can pick up a bottle of Califia Farms Mocha in the fridge at Woolworths or from selected independents. .

Recipe:
Vegan 1-bowl Mocha Banana Bread
Ingredients: · 2 cups of wholemeal flour
· 1 ½ cup of @califiafarms Mocha Cold Brew Coffee
· 3 ripe bananas (+ 1 to top – optional)
· 2 tsp of baking powder
· 2 tbsp of flaxseed meal
· ½ cup of maple syrup
· 2 tbsp of cacao
· ¼ cup of dairy-free chocolate chips to top (optional)
1. Preheat your oven to 180 degrees Celsius and line a loaf tin with baking paper.
2. In a large baking bowl, mash the bananas with a fork until all lumps are gone.
3. Mix the banana with the flaxseed meal and combine.
4. Add the flour, baking powder and cacao and stir to combine.
5. Pour the maple syrup and Califia Farms Mocha Cold Brew Coffee and stir to combine with a whisk. Try not to over-stir.
6. Pour the banana bread into our loaf tin, top with a sliced banana and choc chips and bake in the oven for 45-50 minutes. Wait until it has cooled down completely to cut a slice. .

Happy Sunday ✨☺️ Today we had a beautiful day exploring as a family and had a little picnic. I also got a new Iphone so happy dance 💃🏻 but I am struggling to download all my old pictures to this new phone (I probably have too many 🤪) ⠀
Perfect excuse to reshare one of my old recipe like these Raw Energy Hemp Cacao Bars! They are perfect to make as part of your meal prep for easy snacks throughout the week and to give to children when they come back from school/daycare! ⠀

Raw Hemp Cacao Energy Bars ⠀
1/2 cup of hemp seeds⠀
1 cup of almonds ⠀
1 tsp Vanilla⠀
1 tbsp of maple syrup⠀
1 cup of pitted dates ⠀
4 tbsp of cacao⠀
1/2 cup of coconut flour ⠀
1-2 tbsp of water if required ⠀
1. In a food processor mix all the ingredients together and blitz them for a few minutes until crumbly but sticks together. Add a little water if required if too dry. ⠀
2. Spoon the dough in a tin lined with baking paper and press down with hands or spatula. Top with hemp seeds, goji berries and press them down. ⠀
3. Store in the fridge.⠀
4. Slice them into bars and store in the fridge or freezer. ⠀

Vegan spinach and cashew cheese lasagna (#oilfree #dairyfree)⠀
⠀
Ingredients:⠀
250gr of lasagna sheets ⠀
2 cloves of garlic⠀
1 onion⠀
700gr of passata sauce⠀
1 cup of raw cashews soaked in water for 3-6 hours or in boiling water for 20 minutes⠀
3 tbsp of nutritional yeast⠀
1 tsp of garlic powder⠀
1/2 tsp of onion powder⠀
1/2 lemon squeezed⠀
salt and pepper to taste⠀
500gr of baby spinach or frozen spinach -thawed⠀
2/3 cup of water ⠀
2 tomatoes⠀
⠀
1. Preheat your oven to 180 degrees Celsius;⠀
2. Drain and rinse your cashews then blend them in a blender with water, nutritional yeast, garlic and onion powder, salt and lemon juice. ⠀
3. Blend until smooth then add the thawed spinach and combine. ⠀
4. Dice your onion and garlic cloves.⠀
5. Start layering your lasagna in a lasagna dish starting with passata sauce, lasagna sheet, then onions and garlic, passata sauce, lasagna sheets then the spinach cashew cheese and repeat again until the lasagna is finished. ⠀
6. Top with sliced tomatoes, salt and pepper. ⠀
7. Bake in the oven for 45 minutes at 180 degrees Celsius.

What’s in my fridge?! 🤪 If you ever wondered what’s in a plantbased nutritionist fridge here it is. Packed full with goodness after coming back from the holidays. So this is what you can always find in my fridge:
🍅🥕 🥒🍠 🥬Tomatoes, carrots, capsicums, sweet potatoes and greens are staples
🍉🍍🍇🍊 3-4 different fruits 🌱 celery or other greens and herbs
🧄 garlic and onions 🧅
Hummus tofu
Dates and berries 🍓
Some vegan coconut yogurt, vegan butter, mustards, hemp seeds and a few other condiments.
In the door: soy milk, almond milk, linseed meal, almond meal in jars, other sauces and condiments. .

Raise your hand if you love a creamy pasta!? 🙋🏼‍♀️I created this Vegan Creamy Almond Sundried Tomato Pasta with @califiafarms Unsweetened Almond Milk. 😋Califia’s plant-based milks are the best to use in savoury recipes as they are completely unsweetened and really creamy. You can pick up Califia Farms Unsweetened Almond Milk from the fridge at your local supermarket.
A delicious creamy savoury pasta that is super easy and quick to make and is perfect for a healthy mid-week vegan meal.
Creamy Almond Sundried Tomato Pasta:
Ingredients:
· 400gr pasta
· 2 cups @califiafarms Unsweetened Almond Milk
· 2-3 garlic cloves
· 1/3 cup sundried tomatoes
· 1 tbsp nutritional yeast
· ½ tsp salt and pepper to taste
· ½ tsp dried oregano + more to top.
1. Cook the pasta following the packet instructions.
2. In a blender combine the garlic, Califia Farms Unsweetened Almond Milk, sundried tomatoes, nutritional yeast, salt, pepper.
3. Combine the cooked pasta and creamy almond sundried tomato sauce and heat up together on the stove on low heat.

We just came back from holiday and I spent the day doing laundry and back to reality. I am excited to be eating super healthy in the next few weeks as I indulged a bit too much over xmas, my birthday and our beach holiday! I also want to get back into fitness! Recipe for these raw hazelnut chocolate cheesecake is below. Save it! 💕🙌🏻⠀

Vegan Hazelnut and Chocolate Mini Cheesecakes⠀
⠀
Base:⠀
1/2 cup of almonds⠀
1/2 cup of hazelnuts⠀
1 cup of pitted dates⠀
1 tbsp of water⠀
1 tbsp of cacao⠀
⠀
Cheesecake Layer:⠀ 1 cup of soaked cashews 4-6 hours ⠀
6 tbsp of raw cacao powder⠀
1 tsp of vanilla powder⠀
1/2 cup of rice malt syrup⠀
1/3 cup of melted coconut oil⠀
1/3 cup of roasted hazelnut butter (homemade nutella) ⠀
⠀
Melted raw chocolate + roasted hazelnuts to top⠀
⠀
1. First make some homemade vegan chocolate hazelnut butter by roasting 1 cup of hazelnuts in the oven for 10min at 200 degrees and blending with 1/4 cup of maple syrup, 1/3 cup of cacao and 1/3 cup of coconut oil. (This recipe will make more than you need for the cheesecakes - you can top them with it or use it for toast/ dipping fruit! 😋) ⠀
2. In a food processor blend the base ingredients together then press down into silicon muffin moulds.⠀
3. Then drain your soaked cashews and blend with the cacao, coconut oil, rice malt syrup and hazelnut cacao butter and the vanilla.⠀
4. Pour on-top of the raw bases and freeze for a few hours.⠀
5. Top with melted chocolate and extra hazelnuts and keep in the fridge for a few days or freezer for a few weeks. ⠀
