This healthy vegan watermelon fruit pizza was such a big hit with my kids. I think it is a great snack to share with friends and little ones in summer or for a lighter dessert during the festive period.

This is such a simple healthy recipe idea (not invented by myself but found on pinterest). You can top it with all the fruits/ nuts/seeds that you want.

Watermelon Fruit Pizza

Prep Time 10 minutes
Servings 8

Ingredients

  • 1/4 watermelon
  • 1/2 cup vegan yogurt (almond/cashew or coconut)
  • 1/4 cup berries (blackberries)
  • 1/4 cup grapes
  • 1/4 cup cherries
  • 1 tbsp dark chocolate chips
  • 1 tbsp pumpkin seeds
  • 1 tbsp dessicated coconut
  • 1 tbsp almonds

Instructions

  • Slice the watermelon into pizza slices.
  • Top with vegan yogurt and all the berries and toppings.
  • Store in the fridge for up to 2 days.

I created this watermelon fruit pizza as a collaboration with Alpro using their almond vanilla yogurt but you could use coconut yogurt, chocolate sauce or dollops of date caramel too.

You can also keep the watermelon fruit pizza in the fridge or for very hot summer day you could keep it in the freezer.

I think this is a great activity to do with kids too. I plan on making it a lot this summer and also serving it during our Christmas holiday with family.

Perfect post-Christmas feast! You can make it in winter too using more winter fruits like kiwi, mandarines, cranberries etc. Although eating watermelon in winter isn’t as appealing as eating it cold in summer!
