What to pack in a lunchbox:

- 1 complex carbohydrates ( wholemeal bread, pasta, brown rice, corn tortilla, buckwheat flour etc)
- 1 source of plant-based protein (tofu, chickpeas, lentils, edamame, nut-butter (if school isn’t nut-free), buckwheat flour, hemp seeds, green peas)
- 2 different colours of vegetables for antioxidants
- 1 fruit
- 1 source of healthy fats (seeds, nuts, olives, avocado).

If you are a mum packing vegan lunch boxes for your children, it doesn’t have to be that complicated. Prepping foods on the weekends, making quick sandwiches and packing the same lunchbox a few days in a row or everyday is also fine! Remember nutrition wise the lunchbox is only 1 meal out of 4 or 5 each day! If your child is picky and not eating much at lunch you can increase their nutrition at dinner time.
I also recommend not over packing food and checking how much comes back to get the quantity right.
Another tip I have as a nutritionist is when packing lunchboxes this is not the time to introduce new foods. Try sticking to healthy foods and familiar foods your child likes.
