This vegan tofu Pad Thai recipe is incredible! It’s easy to make, and has a delicious tamarind sauce which is a bit tangy. Pad Thai is the ultimate comfort food in my opinion.

  • Rice Noodles
  • Extra Firm Tofu
  • Shiitake Mushrooms
  • 1 Green Onion
  • 1/2 White Onion
  • 1 Carrot
  • Cilantro
  • Garlic Chives
  • Roasted Diced Peanuts
  • Fresh Lime Juice
  • Bok Choy
  • 3 table poons Peanut Butter
  • 1/3 cup Sesame Seeds
  • 2 cloves Garlic
  • 1/3 Coconut Sugar
  • Tamarind (to taste)
  • 1/3 cup Soy Sauce
  • Sambal Oelek
  • Oil

Instructions

Bring a big pot of salted water to boil. Add the rice noodles when boiling and cook 2-3 minutes or until al dente. Drain.

Chop the bottom inches of both the mushrooms and the bok choy and throw away ends. Wash and chop the rest. Chop green and white onion. Pick the leaves off the cilantro and chop.

To make the sauce, in a bowl mix the Garlic, Coconut Sugar, Sambal Oelek, Peanut Butter, Tamarind, and Soy Sauce with 1/3 cup water.

Thoroughly pat dry the tofu with a paper towel. Dice the tofu into 1/2 inch cubes. Fry the tofu in a large oiled wok (or skillet/frying pan) until golden brown.

Add the mushrooms, carrots and onions to the tofu wok and cook for 1–2 minutes. Reduce heat when vegetables are tender and our in the sauce. Add the cooked noodles, mix ingredients and cook 1-2 minutes more.

Remove from heat and season with lime juice. Garnish with cilantro, garlic chives, lime and peanuts!
