Vegan Pumpkin Smoothie
Try my vegan pumpkin smoothie with roasted butternut squash (pumpkin) and pumpkin pie spices. The perfect smoothie for Fall and Autumn.
In Australia, we actually call butternut squash butternut pumpkin hence the name. I know in America it is called squash so this smoothie is actually a squash pumpkin spice smoothie!
I used my own mix of pumpkin pie spices made with cinnamon, nutmeg, ginger and ground cloves. I personally love this combination of spices.

I also use it in baking for muffins or in my oatmeal. It is used to make pumpkin spice lattes as well but I must confess I have never had/made one!
How to make my vegan pumpkin smoothie:
You will need a blender to make the smoothie. I personally use a Vitamix blender these days. To make the vegan pumpkin smoothie you can use leftover roasted pumpkin (butternut squash) (unseasoned) or canned pumpkin puree.
Fun fact in Australia we do not have canned pumpkin puree so I just make my own by roasting pumpkin and blending it.

Ingredients
- 1 cup roasted pumpkin or 1 cup pumpkin puree
- 300 ml plant milk
- 1-2 tbsp date syrup (or sub for maple syrup)
- handful Ice cubes
- 2-3 tsp pumpkin spice mix or make your own: (1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger and 1/8 tsp ground clove) – add more or less
Instructions
- Blend all the ingredients together, pour and enjoy.

Substitutions:
If you prefer you can reduce the pumpkin/squash quantity and use a frozen banana instead. And as I wrote in the recipe you can use canned pumpkin too.
I personally also like it with date syrup but you could use maple syrup or fresh dates, banana to sweeten it.
