Vegan Chocolate Hemp Energy Bites Recipe [No Bake!]
On a recent flight back from Los Angeles, the in-flight snack options included Nomz energy bites.
(A similar brand is this one).
They were absolutely delicious. But, I thought, the recipe would be SO easy to make at home!
And it totally is.
Ingredients:
- 1 cup walnuts and hazelnuts
- 1 tbsp organic coconut oil
- 1 cup organic medjool dates, pitted
- 1 pinch sea salt (smoked is best)
- 1 tbsp organic cocoa powder (double for extra chocolatey)
- 1 tbsp hemp hearts
Be sure to get high-quality dates. These are the ones we use:
Directions:
Grind the nuts in a blender (I use a Vitamix) for a few pulses.
Be careful not to chop for too long, as the longer it’s in there, the faster it will become butter. And we need it powdery.
Take a tablespoon or two of the nut powder, and place it aside in a small bowl. Add the hemp seeds. This will be the mixture that you roll the balls in later.
With the majority of the nuts still in the blender, add the dates (pitted), coconut oil, and cocoa (double the measurement if you are a chocoholic like me).
Next, sprinkle in the sea salt (I recommend this smoked kind, it’s the absolute best salt.)
Blend everything together until it forms a nice, thick, mushy consistency.
With your hands, roll the dough into balls. Roll each ball in the nut and hemp heart topping mixture.
Finally, place them in the fridge for 20 minutes. After that, they are ready to eat!
