But I am actually someone who enjoys a good kale salad. The key is to prepare it right. You must remove the stems, wash the leaves, and cut them finely then massage them with extra virgin olive oil and season it with salt and lemon juice. Massaging the kale with your fingers is the best way to make your kale tender and delicious!
I like making a balanced meal out of salad by adding protein (tofu or beans), some complex carbs (quinoa, rice or sweet potato) and a delicious creamy dressing with good fats like in this kale salad with peanut dressing.
For this delicious kale salad I combined:
- roasted sweet potatoes
- cooked (and cooled) quinoa
- Tofu (or sub for chickpeas)
- Broccoli (roasted in the oven along with the sweet potatoes
- Peanut dressing
For the peanut dressing to go with this kale salad you will need:
- 1/2 cup of peanut butter
- 1 tbsp of soy sauce
- 2 tbsp of olive oil
- 1/2 tsp of garlic powder
- 1 lemon juiced
Either blend the peanut dressing in a blender or whisk with a fork. You can make it more liquid if you with by adding extra water.
This peanut dressing can also be used in other recipes and in any salads as a salad dressing.
