Sesame-Soy Marinated Tofu Poke Bowl Recipe
Traditional Hawaiian poke bowls are typically made with cold, fresh fish, such as ahi tuna or salmon, that’s marinated in a mixture of soy sauce, sesame oil, and various seasonings.
These bowls are a staple in Hawaiian cuisine, known for their light, refreshing flavors and vibrant ingredients.
In this vegan take on the classic dish, we replace the fish with warm, cooked tofu marinated in a savory sesame-soy sauce. This not only provides a delicious plant-based alternative but also adds a cozy element to the meal.

How To Prepare A Sesame-Soy Marinated Tofu Poke Bowl
1. Prepare the Sushi Rice:
Start by cooking the rice. Rinse the sushi rice under cold water until the water runs clear.
Combine the rinsed rice and water in a rice cooker or a saucepan with a tight-fitting lid. Cook according to the rice cooker instructions or bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes until the water is absorbed and the rice is tender.
Put a metal steamer or strainer on the open pot for the last 2 minutes to steam the edamame.
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, gently fold in the vinegar mixture. Let the rice cool slightly.
2. Marinate the Tofu:
In a medium bowl, whisk together the sesame oil, tamari, maple syrup, lime juice, toasted sesame seeds, black sesame seeds, granulated garlic, and ground ginger.
Add the tofu pieces to the marinade and toss to coat evenly. Let it sit for at least 15 minutes.
3. Prepare the Lime-Marinated Edamame:
In a bowl, combine the steamed edamame, lime juice, and chopped green onion. Mix well and set aside.
4. Make the Spicy Vegan Mayo:
In a small bowl, whisk together the vegan mayonnaise, sriracha, and lime juice until smooth. Adjust the sriracha to your preferred spice level.
5. Assemble the Poke Bowl:
- Divide the sushi rice among serving bowls.
- Top each bowl with the marinated tofu, lime-marinated edamame, sliced Persian cucumber, and avocado slices.
- Drizzle the spicy vegan mayo over the top.
