We tend to have very simple lunches for our lunches either salads, leftovers or sandwiches with avocado or mashed chickpeas. One of my favourite plant-based sandwich filling is this mashed chickpea with capers and cornichons. It is supposed to imitate taste and texture of tuna but I just really like the combination of the salty capers and pickled cornichons with the dill.
You might be wondering why try to imitate tuna when you can just have a can of tuna but apart from being cruelty-free and more ethical –avoiding canned tuna and swapping for chickpeas has a lot of health benefits. This chickpea filling is a lot higher in fibre, vitamins and minerals and lower in saturated fat and heavy metals such as mercury.
Also it is a lot more environmental friendly to avoid tuna and using chickpeas instead so why not try my recipe below next time you fill like a tuna sandwich!
Chickpea “Tuna†Cornichons Sandwich:
Makes 2.
ï‚· 1 can of chickpeas (drained and rinsed)
ï‚· 2 tsp of dried dill or fresh
ï‚· 1 tbsp of capers
ï‚· 3 tbsp of hummus
ï‚· 1 lemon juiced
ï‚· 2 tsp of Maille Dijon Originale Mustard
ï‚· 1 tbsp of diced Maille Cornichons
ï‚· salt and pepper
1. In a bowl combine all the ingredients and mash with a fork or potato masher,
combine with the hummus then spread on sourdough and add greens and extra veggies
such as green sprouts and radishes.
