- 1 block of organic tofu, pressed and cubed

- 400g mushrooms, sliced
- 400g bok choy, chopped

- 25g chopped peanuts

- 1 lime, cut into wedges
- 1 cup white rice
- 1 tablespoon stir-fry spice blend (paprika, ginger, brown sugar, sea salt, black pepper)
Instructions
1. Prepare the Rice:
Cook the white rice according to the package instructions. Set aside and keep warm.
2. Prepare the Tofu:
- Press the tofu to remove excess water, then cut it into cubes.
- In a bowl, toss the tofu cubes with half of the stir-fry spice blend.
3. Stir-Fry the Tofu:
- Heat 1/2 of the toasted sesame oil in a large non-stick skillet or wok over medium-high heat.
- Add the tofu cubes and stir-fry until they are golden and slightly crispy, about 5-7 minutes.
- Remove the tofu from the skillet and set aside.
4. Stir-fry the Vegetables:
- In the same skillet, add the remaining toasted sesame oil.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Add the red pepper and mushrooms. Stir-fry for 3-4 minutes until they start to soften.
- Add the bok choy and cook for another 2-3 minutes until the bok choy is tender.

- Return the tofu to the skillet with the vegetables.
