Starbucks Copycat Recipes: Blueberry Scones

These scones are SUPER simple and you could adapt the recipe by adding a glaze or a different ingredient to flavor.

  • 2 cups All-purpose flour
  • 1/3 cup Sugar
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter, 8 tbsps (Frozen) (or vegan alternative)
  • 1 Egg (or vegan alternative)
  • 4 oz Sour cream (or vegan alternative)
  • 2 tsps Sugar
  • 1/4 cup Blueberries


  • You will need to use the middle position oven rack; adjust if necessary. Preheat oven to 400 degrees F (204 C).
  • In a bowl, mix the first five ingredients: flour, sugar, baking soda/powder, and salt.
  • In a separate bowl mix 4 oz of sour cream and 1 egg. Pour sour cream mixture into your large bowl containing the flour mixture. Use your hands to blend and lightly fold in the blueberries.
  • Create 6 balls and then lightly flatten into the desired shape. Place on a cookie sheet and sprinkle with 2 tsps of sugar. The dough should be about 3/4 of an inch thick.
  • Bake for about 15 to 16 minutes or until lightly golden on top. Be careful not to burn the bottoms.
