Vegan Tofu Ponzu Stir-Fry Recipe Ingredients:

  • 1 block of organic tofu, pressed and cubed
  • 1 red pepper, sliced
  • 400g mushrooms, sliced
  • 400g bok choy, chopped
  • 2 garlic cloves, minced
  • 15ml toasted sesame oil
  • 25g chopped peanuts
  • 1/4 cup ponzu sauce
  • 1 lime, cut into wedges
  • 1 cup white rice
  • 1 tablespoon stir-fry spice blend (paprika, ginger, brown sugar, sea salt, black pepper)

Instructions

1. Prepare the Rice:

Cook the white rice according to the package instructions. Set aside and keep warm.

2. Prepare the Tofu:

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a bowl, toss the tofu cubes with half of the stir-fry spice blend.

3. Stir-Fry the Tofu:

  1. Heat 1/2 of the toasted sesame oil in a large non-stick skillet or wok over medium-high heat.
  2. Add the tofu cubes and stir-fry until they are golden and slightly crispy, about 5-7 minutes.
  3. Remove the tofu from the skillet and set aside.

4. Stir-fry the Vegetables:

  1. In the same skillet, add the remaining toasted sesame oil.
  2. Add the minced garlic and cook for about 30 seconds until fragrant.
