Do you like kale? Have you ever tried it? I challenge you to try it at least once if you haven’t done so already! Maybe this kale salad recipe with my peanut sauce recipe might motivate you to try kale for the first time ever! Kale chips are probably my favourite way to consume kale!! I need to create a kale chip recipe on my website I think next!
But I am actually someone who enjoys a good kale salad. They key is to prepare it right. You must remove the stems, wash the leaves and cut them finely then massage with extra virgin olive oil and season it with salt and lemon juice. Massaging the kale with your fingers is the best way to make your kale tender and delicious!
For this delicious kale salad I combined:
- roasted sweet potatoes
- cooked (and cooled) quinoa
- Tofu (or sub for chickpeas)
- Broccoli (roasted in the oven along with the sweet potatoes
- Peanut dressing
For the peanut sauce or peanut dressing to go with this kale salad you will need:
- 1/2 cup of peanut butter
- 1 tbsp of soy sauce
- 2 tbsp of olive oil
- 1/2 tsp of garlic powder
- 1 lemon juiced
Either blend the sauce in a blender or whisk with a fork. You can make it more liquid if you with by adding extra water.
